What a lifesaver my slow cooker has turned out to be! Unfortunately, I had a small accident at home last week and slipped on the tiled floor. I felt a bone go crunch and knew I was in trouble. I made my way to the emergency department, and before I knew it, I was wheeled into surgery. Suffice to say, I’m unable to walk much for the next few weeks. As a busy homeschool mum, I’m finding it hard to relinquish my responsibilities for too long. Neighbours have been incredibly kind, preparing meals for us (I’m still wondering how one pot of beef casserole could taste so good, so I’ll be trying to get the recipe!), but I can’t rely on goodwill or takeaway deliveries forever (Miss 8 loathes takeaway, and I thoroughly sympathise).
So, as I heal and feel better now that I’m off medication, I pulled out my trusty slow cooker and we enjoyed a delightfully tasty, wholesome lunch that was a breeze to prepare. The basic recipe comes from my favourite, The Margaret Fulton Crock-Pot Cookbook. I’ve been making this particular recipe for ages, and on its own, it’s very tasty, but with a couple of additions, it’s downright delicious! It’s the only way I’ll be preparing my basic beef mince dish from now on. Want to try it for yourself? It’s at the bottom of this blog post.
Tonight, I’ll be roasting a whole chicken in the slow cooker (another foolproof Margaret Fulton recipe), and tomorrow I’ll prepare an interesting-sounding beef curry that I can freeze.
In the meantime, if slow cookers are your thing, and especially if you’re new to slow cooking, I highly recommend finding a copy of The Margaret Fulton Crock-Pot Cookbook. I purchased mine years ago on eBay. It’s a fabulous investment with easy, foolproof recipes that you can readily tweak to suit your family’s tastes.

Cook Time: 7-10 hours on Low, 3-4 hours on High

Ingredients
Method
1. Place the browned beef in the slow cooker.
2. Sprinkle the flour over the beef and add the chopped onion, canned tomatoes, water, thyme, and
seasoning (salt and pepper).
3. Cook on Low for 7-10 hours or on High for 3-4 hours.
4. When the cooking time is complete, mix the Gravox with a small amount of cold water to form a paste.
5. Stir the Gravox paste into the cooked mince.
6. Add the frozen vegetables and cook on High for an additional 15 minutes.
7. Serve with buttered toast or a starch of your choice.
